Lavazza brings Italian passion to the Melbourne Cup Carnival

Lavazza has kicked off the Melbourne Cup Carnival in true style, celebrating ‘From Italy, with Passion’ as it unveiled Caffe Lavazza in the Birdcage enclosure at Flemington this week.

Four of the country’s finest chefs from the enviable stable of venues serving Lavazza will be creating and unveiling signature dishes at this year’s Melbourne Cup Carnival bringing ‘Caffe Lavazza’ truly to life.

Paolo Masciopinto from Sarti (Melbourne), Giovanni Pilu of Pilu at Freshwater (Sydney), Alessandro Pavoni of Ormeggio at the Spit (Sydney) and Jake Nicolson of Black Bird Bar & Grill (Brisbane) are all on board to tantalise the taste-buds of Lavazza’s VIP guests over Carnival.

The opening on Monday treated guests to a sneak peak of the dishes to be served over the spring racing carnival; and the line up is nothing but impressive.

  • Derby Day
    Paolo Masciopinto from Sarti (Melbourne) – Beetroot-infused cavatelli with homemade quail sausage, parmesan fondue and pine nuts
  • Melbourne Cup
    Giovanni Pilu of Pilu at Freshwater (Sydney) – Risotto made with Italian carnaroli rice which has been dried and aged for 12 months and features a specially-created champagne foam, dried mullet roe bottarga and fennel puree, layered over a freshly shucked Sydney rock oyster
  • Oaks Day
    Jake Nicolson of Black Bird Bar & Grill (Brisbane) – Cumin roasted pulled lamb slider with smokey eggplant and pickled green tomatoes
  • Stakes Day
    Daniel Wilson of Huxtable (Melbourne) – a ‘Locale Espresso Foam Cup’, described as lightly whipped white chocolate mousse, infused with espresso and served in an ACME espresso cup
