A Canadian leading the charge for honest, Japanese cuisine in Hong Kong, Matt Abergel visits Australia for the first time to bring the signature ingredient-driven dishes from his game-changing yakitori restaurant Yardbird

Jamie Bissonnette – Toro & Coppa, Boston & Toro, New York, USA

Ex-punk rocker and vegan turned nose-to-tail champion is well-known locally and nationally for his exceptional charcuterie and will present his fun and relaxed approach to Italian and Spanish flavours with a touch of funk and soul.

Jeremy Charles, Raymonds, Newfoundland, Canada

Deep in the wilds of Newfoundland, Jeremy Charles stakes his claim as the King of Canadian cuisine. With a terroir-driven menu based on ideas of foraging, hunting and subsistence farming, his Raymond’s Restaurant has become the new go-to destination for those seeking the authentic flavour of the Canadian landscape.

Lorenzo Cogo, El Coq, Vicenza, Italy

One of the youngest Italian chefs to gain a Michelin-star, Chef Cogo has worked his way up from the bottom with hard work and has capatilised on learning from many amazing chefs including a notable stint in Australia working with names such as Shannon Bennett, Mark Best and Tetsuya. He employs a unique culinary technique which he calls it “instinctive”, and prepares his dishes as no other chefs would, in a fresh and creative manner.

Ruth Rogers, River Café, London, UK

Ruth Rogers has a straightforward outlook on food: with the finest ingredients, even the simplest of dishes shine. It’s a philosophy that has brought acclaim to her River Café eatery – a London icon that’s been a training ground for a who’s who of British chefs, including Hugh Fearnley-Whittingstall, April Bloomfield and Jamie Oliver.
